Mediterranean burger with vegetables & feta cheese

What about a burger with Mediterranean flavors in every bite? The Mediterranean diet emphasizes on grains, fruits and vegetables, which are all ingredients of the following recipe.

Ingredients

They give about 5 burgers.

For the dressing:

  • ½ cup feta cheese
  • 3 tablespoons yogurt, low-fat
  • 1 clove garlic, finely chopped
  • Dill
  • Pepper

For the burgers:

  • Onion, sliced
  • 1 tomato, melted
  • 1 zucchini, grated
  • 1 green pepper chopped Florina
  • 1,5 kil’o, lean beef (eg rump)
  • 1 egg, lightly beaten
  • 1 slice of bread, preferably wholemeal
  • 1 teaspoon oregano, dried
  • ¼ cup parsley, chopped fresh
  • 1 pinch salt
  • Pepper

 

Prefer wholewheat buns for your recipe.

Steps

  • For the dressing simply mix all ingredients in a blender & keep it in the refrigerator.
  • Grill the onions for about 2 minutes on each side and set aside.
  • Combine the ground meat with the remaining ingredients and mix until a uniform mixture is made. Form about 5 burgers and cook for about 6 minutes on each side.
  • “Assemble” the burger by adding a wholewheat bun, a slice of onion and feta cheese dressing on both sides. If you wish you can add spinach & tomato for extra flavor and juicy texture.
