Mediterranean burger with vegetables & feta cheese

What about a burger with Mediterranean flavors in every bite? The Mediterranean diet emphasizes on grains, fruits and vegetables, which are all ingredients of the following recipe.
Ingredients
They give about 5 burgers.
For the dressing:
- ½ cup feta cheese
- 3 tablespoons yogurt, low-fat
- 1 clove garlic, finely chopped
- Dill
- Pepper
For the burgers:
- Onion, sliced
- 1 tomato, melted
- 1 zucchini, grated
- 1 green pepper chopped Florina
- 1,5 kil’o, lean beef (eg rump)
- 1 egg, lightly beaten
- 1 slice of bread, preferably wholemeal
- 1 teaspoon oregano, dried
- ¼ cup parsley, chopped fresh
- 1 pinch salt
- Pepper
Prefer wholewheat buns for your recipe.
Steps
- For the dressing simply mix all ingredients in a blender & keep it in the refrigerator.
- Grill the onions for about 2 minutes on each side and set aside.
- Combine the ground meat with the remaining ingredients and mix until a uniform mixture is made. Form about 5 burgers and cook for about 6 minutes on each side.
- “Assemble” the burger by adding a wholewheat bun, a slice of onion and feta cheese dressing on both sides. If you wish you can add spinach & tomato for extra flavor and juicy texture.
